How about fast, but healthy?
Spinach, sweet potato and lentil dhal takes 10 minutes to make (35 mins to cook) is vegan, low calorie, and counts as three of your 5-a-day. Plus, it’s easy to make in bulk and freeze for future meals.
Alternatively, you can pan-fry salmon fillets for 7-10 minutes with baby-stem broccoli, peas, chopped onions (or any other vegetables) as well as whatever herbs and spices take your fancy.
